In honour of Canada Day, here is a delicious red (tomato) and white (feta cheese) recipe!

Super easy to make, and scrumptious! (Tiktok made me do it!)

Prep Time 5 minutes
Cook Time 45 minutes
Total Time 55 minutes
Servings 4

Ingredients

  • 1 box pasta
  • 1 80z block feta cheese
  • 2 cups cherry tomatoes
  • 1 clove garlic – chopped
  • 1/4 cup & 1 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp oregano
  • 4 fresh leaves of basil – chopped

Directions

  • Set oven to 400 F degrees. Add tomatoes, 1/4c oil, garlic, S&P to baking dish and mix.
  • Set block of feta cheese in centre of dish. Top with 1 tbsp oil and oregano.
  • Bake for approximately 45 minutes — until tomatoes are roasted and cheese becomes soft and melted.
  • Cook pasta while baking. Cook as per directions on the book, or to your liking.
  • Remove dish from oven. Mix until it becomes a sauce. Add cooked pasta and basil and mix well.
  • Add some water if you find the mixture dry. Serve & enjoy!

 

 

Now as I said, Tiktok made me do it. So I combined a bunch of recipe ideas I found online for this. Feel free to add cooked fish, chicken, etc to your recipe if you like!
