Got a couple of bananas that are maybe a little too ripe to eat? Banana bread is the perfect solution! And if you don’t have over-ripe bananas, toss them in the freezer for a day, pull them out and let thaw and ‘poof‘, ready for bread! This recipe is super simple — my favourite kind of recipe!

Cook Time 45 minutes
Total Time 60 minutes
Servings 1 loaf
Ingredients
- 1 1/3 cup all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/3 cup butter or margarine
- 2/3 cup sugar
- 2 eggs
- 1 cup mashed bananas (about 2 bananas)
- optional: 1/4 cup nuts or seeds – either for in the batter or to sprinkle on top
Directions
- Preheat your oven to 350 F.
- In a bowl whisk together the flour, salt, baking soda and baking powder. Set aside.
- In a separate bowl, cream together the butter and sugar.
- Then beat the flour mix into the butter mix, until it has the consistency of brown sugar.
- Beat in the eggs one at a time.
- Fold in the mashed banana (and nuts/seed if you want).
- Spread into greased loaf pan (sprinkle nuts/seeds on top).
- Bake for about 45 minutes, or until a toothpick inserted into the centre of the loaf comes out clean.
- Remove loaf from pan and cool on cooling rack.
